Eid Meat Loaf by Zarnak Sidhwa

Ingredients:

  • Mutton or Beef mince (very fine) 1/2 kg
  • Fine breadcrumbs 3/4 cup
  • BBQ sauce 2 tbsp
  • Chopped onion 1
  • Crushed garlic 2 cloves
  • Chopped celery (stalk and leaves) 1/2 cup
  • Worcestershire sauce 1 tbsp
  • Crushed black pepper 1 tsp
  • Mustard paste 1/2 tbsp
  • Egg 1
  • Brown sugar 1 tsp
  • Olive oil 2 tbsp
  • Salt to taste
  • Hard-boiled egg (sliced) 1 for garnish

Method:

  1. Heat oil, saute onions and garlic.
  2. Add celery, pepper, salt and sugar.
  3. Cook on high heat for a minute.
  4. Put in bowl and let cool.
  5. Add to mince the cooked and cooled celery-onion mixture, beaten egg and breadcrumbs.
  6. Combine BBQ sauce, Worcestershire sauce and mustard paste.
  7. Place in greased loaf pan.
  8. Bake at 180 degrees C in a preheated oven for 20 minutes or till it is done.
  9. Overcooking will make it dense.
  10. Slice when cool, serve with veggies or sliced in sandwich.
