Kachay Gosht Ki Biryani by Shireen Anwer

Ingredients:

  • Mutton 1 kg
  • Raw papaya 1-1/2 tbsp
  • Oil 3/4 cup
  • Yogurt 2 cups
  • Green chilies 10
  • Coriander leaves 1/2 cup
  • Mint leaves 1/2 cup
  • Ginger garlic paste 1 tbsp
  • Lemon juice 2 tbsp
  • Salt 2 tsp
  • Chili powder 2 tsp
  • Brown onion 4 tbsp
  • All spice 1 tsp
  • Nutmeg grinded 1/4 tsp
  • Mace grinded 1/4 tsp
  • Green cardamom grinded 1/2 tsp
  • Sela rice 1 kg
  • Yellow color 1 pinch
  • Kewra 1 tsp
  • Chopped hara masala as required

Method:

  1. Grind green chilies, coriander leaves and mint leaves and mix in yogurt.
  2. Now marinate mutton with this mixture, raw papaya, ginger garlic paste, lemon juice, salt, chili powder, brown onion, all spice, nutmeg, mace and green cardamom for 4 hours.
  3.  Then put in pan and put hara masala.
  4. Now add rice.
  5. Then put yellow color, kewra and brown onion and cook on tawa on high flame for 10 minutes.
  6. Cook on high flame for 10 minutes, then cook on low flame for 45 minutes, mix it nicely and serve.
