Rangeen Biryani by Chef Gulzar

Ingredients:
- Rice 500 gm
- Cow mince 500 gm
- Onion 3
- Tomatoes 4-5
- Green chilies 8-10
- Fresh coriander 1/2 bunch
- Black cumin 1 tsp
- Ginger garlic paste 2 tbsp
- Mustard seeds 1 tsp
- All spice powder 1 tbsp
- Crushed red chili 2 tbsp
- Black pepper 1 tsp
- Bay leaves 4-5
- Green cardamoms 4-5
- Cinnamon 2 sticks
- Cloves 4-5
- Tamarind paste 1 cup
- Red color 1 pinch
- Green color 1 pinch
- Ghee 1 cup
- Salt to taste
Method:
- For rice: Wash rice and soak it.
- Boil it 1/4 with black cumin, bay leaves and salt, strain it and keep it aside.
- Rice is ready.
- For biryani: Heat ghee in pan, fry onion until brown, take it out and keep it aside.
- Now put cinnamon, cloves, green cardamoms, black pepper and mustard seeds in ghee and crackle it.
- Then add ginger garlic paste and mince and roast it nicely until mince and ghee separates.
- Now put water as required and tender it.
- When mince tender, add tomatoes and green chilies and cook until mince dries.
- Now spread some ghee on base of pot. Put rice.
- Now put 1/2 cup tamarind paste and put 1/2 brown onion.
- Then spread mince and put remaining rice.
- Then put remaining tamarind paste, brown onion and fresh coriander, dissolve red color and green color in water separately, put on top of it and simmer it.
- In end, dish out it and serve.
