Biscuit Pudding by Zarnak Sidhwa

Ingredients:

  • Caster sugar 1/2 cup
  • Cocoa powder 1/3 cup
  • Ground cinnamon 1/4 tsp
  • Salt 1/4 tsp
  • Eggs 2
  • Milk 2 cups
  • Vanilla essence 1/2 tsp
  • Oil 1 tbsp
  • Chocolate biscuits (crumbled) 1 packet

Method:

  1. Mix sugar, cocoa powder, cinnamon, and salt.
  2. In another bowl, whisk together eggs, milk, vanilla, and oil.
  3. Add sugar mixture to wet ingredients and stir until combined.
  4. Cover bottom of a greased 8 inch square baking dish with an even layer of the crumbled biscuits.
  5. Pour liquid mixture evenly over the biscuits.
  6. Press down onto biscuits with back of  large spoon to moisten them.
  7. Place dish into larger high sided baking dish.
  8. Place dish on oven rack.
  9. Pour boiling water halfway up sides of the 8x8 inch dish.
  10. Bake in preheated oven for 45 minutes or until pudding is set.
