Biscuit Pudding by Zarnak Sidhwa

Ingredients:
- Caster sugar 1/2 cup
- Cocoa powder 1/3 cup
- Ground cinnamon 1/4 tsp
- Salt 1/4 tsp
- Eggs 2
- Milk 2 cups
- Vanilla essence 1/2 tsp
- Oil 1 tbsp
- Chocolate biscuits (crumbled) 1 packet
Method:
- Mix sugar, cocoa powder, cinnamon, and salt.
- In another bowl, whisk together eggs, milk, vanilla, and oil.
- Add sugar mixture to wet ingredients and stir until combined.
- Cover bottom of a greased 8 inch square baking dish with an even layer of the crumbled biscuits.
- Pour liquid mixture evenly over the biscuits.
- Press down onto biscuits with back of large spoon to moisten them.
- Place dish into larger high sided baking dish.
- Place dish on oven rack.
- Pour boiling water halfway up sides of the 8x8 inch dish.
- Bake in preheated oven for 45 minutes or until pudding is set.
