Afghani Rice by Chef Gulzar

Ingredients:
- Sela rice 500 gm
- Beef 500 gm
- Onion 1
- Raisins 1/2 cup
- Cumin seeds 1 tsp
- Grated carrot 1
- Black pepper 1 tsp
- Chopped garlic 2-3 cloves
- Yogurt 1 cup
- Crushed cardamom 1/2 tsp
- Cinnamon 2 sticks
- Cloves 3-4
- Sugar 1 tbsp
- Oil 2-3 tbsp
- Salt to taste
Method:
- Clean rice and soak for 2-3 hours in water.
- Heat oil in pan, put cinnamon and cloves and crackle it.
- Now add onion, garlic and beef and roast it nicely.
- Then add yogurt, black pepper, cinnamon, salt and cumin seeds.
- When mixture dries and oil leaves, add 1 to 1-1/2 cup water and cook it.
- When meat tender and stock is ready, add rice.
- When rice is ready, simmer it.
- Now add carrot, raisins, sugar and water in pan and cook for 3-5 minutes.
- Then put this mixture on rice and serve.
