Strawberry Mousse by Zarnak Sidhwa

Ingredients:

  • Gelatin 2 tsp
  • Cold water 3 tbsp
  • Strawberry puree 1 cup
  • Caster sugar 1/4 cup
  • Cream 1-1/2 cups

Method:

  1. Prepare ice water bath, half fill large bowl with ice, cover ice with cold water and set aside.
  2. Sprinkle gelatin over cold water and stir together until gelatin is dissolved.
  3. Let stand to bloom, about 5 minutes.
  4. In small saucepan, stir together strawberry puree and sugar until combined well.
  5. Bring mixture to a boil over medium heat, stirring constantly. Remove from heat; add bloomed gelatin and whisk to combine well.
  6. Using fine mesh sieve, strain strawberry mixture into medium bowl.
  7. Set bowl over the ice water bath and stir (do not whisk because it creates bubbles) constantly until mixture cools and thickens.
  8. Meanwhile, beat cream until soft peaks form.
  9. Remove bowl from ice water bath.
  10. Using spatula, fold one third of whipped cream into strawberry mixture and then fold in remaining whipped cream.
  11. Using fine mesh sieve, strain mousse into medium bowl.
