Kashmiri Keema, Yaki And Kashmiri Fresh Fruit Rice by Chef Gulzar

                                            KASHMIRI QEEMA

INGREDIENTS:

  • Beef Mince:                    1/2 kg 
  • Chopped Garlic:             1 tbsp
  • Ginger powder:              1 tsp
  • Red Chili Powder:          1 tsp
  • Cumin Powder:              1/2 tsp
  • All Spice Powder:          1 tsp
  • Black Cardamom seed:  1/3 tsp
  • Bay Leaves:                    2-3
  • Fennel seeds:                  1/2 tsp
  • Kashmiri Chili Paste:      1/2 cup
  • Bread Slices:                    as required
  • Egg;                                  1
  • Yogurt:                             250 mg
  • Coriander:                        1/2 bunch
  • Oil:                                    as required
  • Salt:                                   to taste
METHOD:
  1. Combine 1/2 kg beef mince,1/2 tsp fennel seed powder, 1 tsp red chili powder, 1/2 tsp cumin powder, 1 tsp all spice powder, salt, 1 egg and bread slices in a chopper and mix them together.
  2. Now give kabab shape to this material and fry in hot oil and keep them separate.
  3. Now fry chopped garlic and 2 to 3 bay leaves in another pan. Now add 1/3 tbsp black cardamom seeds, 1/2 cup kashmiri chili paste and 250 mg yogurt in it and let it cook.
  4. When the water o yogurt starts to absorb then add a required amount of water in it and cook it until together.
  5. Now add already fried kababs in it and cook on a very light flame.
  6. At the end garnish it with coriander and serve.

                                YAGI

INGREDIENTS:
  • Rice flour:                   250 gm
  • All purpose flour:        125 gm
  • Dry Fruit:                     1/2 cup
  • Crushed cumin seeds:  1/2 tsp
  • Caraway seeds:             1/3 tsp
  • Oil:                                for fry
METHOD:
  1. Boiled 1/2 cup of dry fruits and remove there cover.
  2. Now add 1/2 cup of all purpose flour, 1/2 tsp of crushed cumin seeds, 1/2 tsp of caraway seed in rice flour and mix them together.
  3. Now make dough by adding water in it.
  4. Now flatten the dough and cut it in square shape and fry them in hot oil.
  5. Dish out them and serve.

                       KASHMIRI FRESH FRUIT RICE

INGREDIENTS:
  • Sela Rice:                      500 gm
  • Chopped fresh fruits:    300 gm
  • Cloves:                          2 to 3
  • Cinnamon:                     1 to 3 sticks
  • Sugar:                             2 tbsp 
  • Green Cardamoms:        4 to 5
  •  Cream:                           1/2 cup
  • Dry Fruits:                      1/2 cup
  • Clarified Butter:              1 cup
METHOD:
  1. Clean 1/2 kg Sela Rice and infuse them for 2 to 3 hours, then half boiled them.
  2. Now heat oil in a pan and add 4 to 5 green cardamoms, 1 to 2 cinnamon sticks, 2 to 3 cloves and cook them together, now add 300 gm of finally chopped fresh fruits.
  3. Now add boiled rice and 2 tbsp of sugar and mix them together.
  4. Now add water so rice can cook easily.
  5. At the end add 1/2 cup cream, 1/2 cup dry fruits and cook on a light flame.
  6. Ready to serve.
