Chicken Maharani by Zarnak Sidhwa

Ingredients:
For Marination:
- Garlic 10-15 cloves
- Ginger 2-inch piece
- Chilli powder 4 tsp
- Garam masala 2 tsp
- Coriander powder 1-1/2 tbsp
- Cumin powder 1 tsp
- Powdered carom seeds 1 tbsp
- Dry fenugreek leaves 2 tbsp
- Corn flour 2 tbsp
- Rice flour 2 tbsp
- Lemon juice of 2 lemons
- Salt to taste
- Soya sauce 1 tbsp
Other Ingredients:
- Onions (sliced) 4
- Green chillies 6
- Soya sauce 1/2 tsp
- Black pepper 1/2 tsp
- Curry leaves few
- Chopped coriander 2 tbsp
Method:
- Grind ginger and garlic.
- Marinate chicken with all above ingredients for 2-4 hours in refrigerator.
- Deep fry marinated chicken a little at a time in hot oil on low flame and set aside.
- In same oil, fry onions and green chillies till onions turn a light brown.
- Add soya sauce and pepper.
- In another pan, fry few curry leaves and set aside.
- Add curry leaves to fried onions, add fried chicken, chopped coriander and mix well before serving.
