Bariyaan Gosht by Chef Gulzar

Ingredients:

  • Mutton meat 1/2 kg
  • Bariyaan 250 gm
  • Onion 2
  • Ginger garlic 2 tbsp
  • Cumin seeds 1 tsp
  • Coriander seeds 1 tsp
  • Crushed mustard seeds 1/2 tsp
  • Fenugreek seeds 1/2 tsp
  • Red chili powder 1 tsp
  • Curry leaves 4-5
  • Tamarind paste 1/2 cup
  • Fresh coriander 1/2 bunch
  • Oil 3-4 tbsp
  • Salt to taste

Method:

  1. Add mustard seeds, tamarind paste, onion, ginger garlic, salt and red chili powder in blender jug and make paste.
  2. Now add meat in this paste, mix it and leave for 1 hour.
  3. Then heat oil in pan, put curry leaves, cumin seeds and coriander seeds and crackle it.
  4. Then add meat and remaining paste and roast it.
  5. Then add bariyaan and water as required and cook until meat tender and masala leaves oil.
  6. Then take out in dish, garnish with fresh coriander and serve.
