Salad Cream by Zarnak Sidhwa

Ingredients:

  • Eggs (hard-boiled, yolks only) 2
  • Mustard 2 tbsp
  • Lemon juice of 1/2 lemon
  • Caster sugar 1 tbsp
  • White vinegar 3 tbsp
  • Cream 150 ml
  • Olive oil 150 ml
  • Salt to taste
  • Ground white pepper

Method:

  1. Place all ingredients, apart from olive oil and seasoning, into a food processor.
  2. Blend until cream starts to thicken then gradually add the oil, until salad cream is smooth and emulsified.
  3. Season, to taste, with salt and ground white pepper.
