Salad Cream by Zarnak Sidhwa

Ingredients:
- Eggs (hard-boiled, yolks only) 2
- Mustard 2 tbsp
- Lemon juice of 1/2 lemon
- Caster sugar 1 tbsp
- White vinegar 3 tbsp
- Cream 150 ml
- Olive oil 150 ml
- Salt to taste
- Ground white pepper
Method:
- Place all ingredients, apart from olive oil and seasoning, into a food processor.
- Blend until cream starts to thicken then gradually add the oil, until salad cream is smooth and emulsified.
- Season, to taste, with salt and ground white pepper.
