Vegetable Fried Rice by Zubaida Tariq

Ingredients:
- Rice 2 cups
- Chopped green onions 1 cup
- Chopped carrots 2
- Chopped capsicum 2
- Chopped green chilies 4
- Chopped garlic cloves 6
- Oil 1/2 cup
- Crushed black pepper 1 tsp
- Sugar 1 tsp
- Sesame seed oil 1 tsp
- Soya sauce 2 tbsp
- White vinegar 2 tbsp
- Salt to taste
Method:
- Wash rice nicely, soak for 20 minutes and put water again.
- Also put salt and 1 tbsp vinegar, boil it 2/4, drain water and simmer it for 5 minutes.
- Now heat oil in wok and fry garlic cloves till golden brown.
- Then put carrots, capsicum and green chilies.
- Then put 1 tbsp soya sauce, 1 tbsp vinegar and sugar and roast it lightly.
- Then add rice.
- Put again soya sauce and vinegar, stir fry for 5 minutes and put sesame seed oil.
- At the time of serving, put green onions and serve hot.
