Aloo Baigan Ki Sabzi by Shireen Anwer

Ingredients:

  • Baigan 1/2 kg
  • Capsicum 1
  • Onion 2
  • Potatoes 2
  • Oil 1/4 cup
  • Chopped onion 1 cup
  • Blended tomatoes 2
  • Roasted & crushed cumin 1 tsp
  • Roasted & crushed coriander 1 tsp
  • Salt 1 tsp
  • Chili powder 1 tsp
  • Garlic paste 1 tsp
  • Tamarind pulp 1/4 cup
  • Chopped coriander and green chilies to garnish

Method:

  1. Heat oil in pan and fry chopped onion for 5 minutes.
  2. Now put tomatoes, cumin, coriander, salt, chili powder, garlic paste and tamarind pulp and fry it.
  3. Now put capsicum cubes, baigan, 2 fried onion and potatoes and simmer it for 5 minutes.
  4. In end, put chopped coriander and green chilies and serve with roti.
