Khatoo Mithoo Bhejoo by Zarnak Sidhwa

Ingredients:

  • Goat’s brains 4
  • Finely sliced onions 4 large
  • Garlic 6 cloves
  • Ginger 1-inch piece
  • Green chilies finely chopped 4
  • Finely chopped coriander 1 tbsp
  • Turmeric powder 1/2 tsp
  • Red chilli powder 1/2 tsp
  • Tomatoes chopped 2
  • Vinegar 2 tbsp
  • Worcestershire sauce 2 tbsp
  • Sugar 1-1/2 tbsp
  • Salt 2 tsp
  • Oil or ghee 3 tbsp

Method:

  1. Clean brains by soaking in cold water for 10 to 15 minutes, then carefully remove outer skin and blood vessels.
  2. Also remove 2 white beads at base of brain, cut each into 4-6 pieces.
  3. In pan heat oil or ghee and fry  onions in it till golden.
  4. Add ginger garlic, green chillies, coriander, red chilli powder, turmeric powder, let cook till well mixed and then add tomatoes, cook till soft, add brain and salt, let cook covered till brain is done.
  5. Add vinegar, Worcestershire sauce and sugar and simmer.
  6. Lastly add chopped coriander leaves and serve.
