Keema Per Eeda by Zarnak Sidhwa

Ingredients:
- Mutton mince 200 gm
- Eggs 6
- Ghee 2-1/2 tbsp
- Onions chopped 2
- Tomatoes chopped 2
- Green chillies de-seeded 3
- Garlic chopped 5-6 cloves
- Ginger chopped 1-inch piece
- Turmeric powder 1/2 tsp
- Cumin powder 1-1/2 tsp
- Red chilli powder 3/4 tsp
- Salt to taste
- Sugar 3/4 tsp
- Vinegar 1-1/2 tbsp
Method:
- Heat ghee in pan, add onions and saute for 1-2 minutes.
- Add mince and cook for 5 to 6 minutes.
- Meanwhile blend tomatoes and green chillies to smooth paste and set it aside.
- Add garlic and ginger to mince, mix and cook for 1 minute.
- Add turmeric powder, cumin powder, red chilli powder and salt and mix well.
- Cover and cook for another 3 to 4 minutes.
- Add tomato paste and mix well.
- Add sugar, vinegar, mix well and continue to cook.
- Break one egg at a time and place at different places over mince mixture.
- Sprinkle a little salt and cover and cook for 4 to 5 minutes or till eggs are set.
- Serve hot with roti, paav or steamed rice.
