Prawn Paella by Chef Gulzar

Ingredients:

  • Prawns 500 gm
  • Sela rice 300 gm
  • Chopped onion 1
  • Chopped garlic 3-4 cloves
  • Talhar chilies 1-2
  • Chopped tomatoes 2-3
  • Peas 1/2 cup
  • Black pepper 1/2 tsp
  • Red chili powder 1 tsp
  • Stock 1/2 liter
  • Vinegar 1/2 cup
  • Fish sauce 1tbsp
  • Saffron 1 pinch
  • Coriander 1/2 bunch
  • Lemon zest 1
  • Oil as required
  • Salt to taste

Method:

  1. Clean prawns and wash it.
  2. Now dry it, fry it and keep it aside.
  3. Then clean rice, wash it and soak in water for 2 hours.
  4. Now heat oil in pan and fry onion and garlic.
  5. Then and talhar chilies, vinegar, salt, red chili powder, black pepper, tomatoes, mix it nicely and roast it.
  6. Now add fish sauce, stock and rice, mix it nicely and cook until rice is ready.
  7. Then put saffron and prawns and mix it.
  8. Then take out in dish, garnish with coriander and lemon zest and serve.
