Prawn Paella by Chef Gulzar

Ingredients:
- Prawns 500 gm
- Sela rice 300 gm
- Chopped onion 1
- Chopped garlic 3-4 cloves
- Talhar chilies 1-2
- Chopped tomatoes 2-3
- Peas 1/2 cup
- Black pepper 1/2 tsp
- Red chili powder 1 tsp
- Stock 1/2 liter
- Vinegar 1/2 cup
- Fish sauce 1tbsp
- Saffron 1 pinch
- Coriander 1/2 bunch
- Lemon zest 1
- Oil as required
- Salt to taste
Method:
- Clean prawns and wash it.
- Now dry it, fry it and keep it aside.
- Then clean rice, wash it and soak in water for 2 hours.
- Now heat oil in pan and fry onion and garlic.
- Then and talhar chilies, vinegar, salt, red chili powder, black pepper, tomatoes, mix it nicely and roast it.
- Now add fish sauce, stock and rice, mix it nicely and cook until rice is ready.
- Then put saffron and prawns and mix it.
- Then take out in dish, garnish with coriander and lemon zest and serve.
