Pad Thai Noodles by Shireen Anwer

Ingredients:

  • Rice noodles 200 gm
  • Chicken breast 1 thinly sliced
  • Carrots 2
  • Beans sprouts 1 cup
  • Capsicum 1
  • Garlic crushed 1 tbsp
  • Onion 1
  • Green onion 2
  • Salt 1 tsp
  • Soya sauce 1 tbsp
  • Roasted peanut coarsely 2 tbsp
  • Lemon juice 2 tbsp
  • Oil 1/4 cup

For Sugar Syrup:

  • Sugar 2 tbsp
  • Water 4 tbsp
  • Thai red curry paste 2 tbsp

For Sauce:

  • Tamarind paste 1 tbsp
  • Fish sauce 2 tbsp
  • Water 1/4 cup

Method:

  1. For sauce: Mix all ingredients and keep it aside.
  2. Soak rice noodles in hot water for 20 minutes.
  3. Then take out water and keep it aside.
  4. Heat oil in wok (karahi pan), put garlic with chicken and cook for 1 minute.
  5. Now put carrot, beans, capsicum, onion, green onion, red curry paste, salt, black pepper, soya sauce, tamarind paste and syrup.
  6. Then add noodles and mix on high flame nicely.
  7. In end, take out in platter, garnish with peanut and serve.
