Red Pumpkin Patio by Zarnak Sidhwa

Ingredients:
- Red pumpkin 1/2 kg
- Garlic 4 cloves
- Cumin seeds 1 tbsp
- Dry red chillies 3
- Onion (halved) 1
- Onion (sliced) 1
- Salt 1 tsp
- Lemon juice 1 tbsp
- Sugar 1 tsp
- Coriander (chopped) 2 tbsp
- Oil 2 tbsp
Method:
- Remove seeds and skin of pumpkin and cut into small squares.
- Heat oil, fry the sliced onion.
- Do not brown.
- Grind halved onion, cumin seeds, garlic, and red chillies to fine paste.
- Add paste to onion.
- A little water can be added.
- Add salt and pumpkin. Let boil.
- Then simmer till pumpkin is done.
- Remove from fire when done and mash well.
- Return pan to fire and then add lemon juice and sugar, serve garnished with chopped coriander leaves. Serve with rice.
