Choux Pastry by Zarnak Sidhwa

Ingredients:
- Water 1 cup
- Butter 80 gm
- Icing sugar 2 tbsp
- Sifted flour 1 cup
- Eggs 3-4
Method:
- Place 1 cup of water and 80 gm of butter in saucepan and bring it to boil.
- Once it starts simmering, add 1 cup of sifted flour and 2 tbsp icing sugar and mix rigorously with a wooden spoon on medium heat.
- Cook for 3-4minutes till dough shapes into a ball.
- Set aside to cool for 5 minutes before adding eggs, lightly whisked, one at time, each time till fully incorporated.
- Keep mixing till all eggs are added and it gives a glossy look.
