Schezwan Style Crispy Fish by Chef Gulzar

Ingredients:

For Schezwan Sauce:

  • Talhar chili paste 1/2 cup
  • Soya sauce 1/2 cup
  • Tomato paste 1/2 cup
  • Vinegar 4 tbsp
  • Chopped garlic 10 cloves
  • Oyster sauce 4 tbsp
  • Chicken stock 1 cup
  • Brown sugar 1/2 cup
  • Sesame seed oil 1 tbsp
  • Chinese salt 1 tsp
  • Oil 4 tbsp

For Schezwan Crispy Fish:

  • Whole fish 1
  • Garlic paste 2 tbsp
  • Flour 1/2 cup
  • Schezwan sauce as required
  • Spring onion 3-4
  • Carrot (sliced) 1
  • Oil for fry
  • Salt to taste

Method:

  1. For sauce: Heat oil in pan and fry garlic cloves.
  2. Now add chili paste, soya sauce, tomato paste, oyster sauce and Chinese salt and roast for 1-2 minutes.
  3. Then add sesame seed oil, chicken stock, brown sugar and vinegar and cook it.
  4. Now put in grinder jug and make paste.
  5. Then put again in pan, roast for 1 minute and make thick paste.
  6. For fish: Cut fish into pieces and mix garlic paste and salt in it.
  7. Then coat with flour and fry it.
  8. Then keep fried fish in platter and put sauce.
  9. Then put green onion and carrot on top and serve.
