Chocolate Cookies by Zarnak Sidhwa

Ingredients:
- Dark chocolate 125 gm
- Flour 150 gm
- Cocoa powder 30 gm
- Soda bicarbonate 1 tsp
- Salt 1/2 tsp
- Unsalted butter 125 gm
- Light brown sugar 75 gm
- Caster sugar 50 gm
- Vanilla essence 1 tsp
- Egg (cold) 1
- Chocolate chips 350 gm
Method:
- Melt dark chocolate either in microwave or in a heatproof dish over a pan of simmering water.
- Put flour, cocoa, soda bicarbonate and salt into a bowl.
- Beat butter, light brown and caster sugars in another bowl.
- Add melted chocolate and mix together.
- Beat in vanilla essence and cold egg and then mix in dry ingredients.
- Finally stir in chocolate chips.
- Scoop out 12 equal-sized mounds using an ice cream scoop and place on a baking sheet apart.
- Do not flatten them.
- Bake at 170 degrees C for 18 minutes, testing with a cake tester to make sure it comes out semi-clean and not wet with cake batter.
- Leave to cool slightly on the baking sheet for 4-5 minutes, then transfer them to a cooling rack to harden as they cool.
