Corn Chowder With Cheesy Chips by Zarnak Sidhwa

Ingredients:
- Sweet corn 1 cup
- Spring onions 2
- Garlic 1 clove
- Semolina 2 tbsp
- Vegetable stock 2 cups
- Tortilla chips 2 cups
- Grated cheddar cheese 1 cup
- Red chillies (deseeded and finely chopped) 2 long
Method:
- Drain sweet corn and put into a food processor with spring onions, garlic and semolina.
- Pulse till well mixed yet coarse.
- Tip this mixture into a large saucepan, add hot vegetable stock and bring to the boil, then turn down the heat and let the chowder simmer, partially covered for 10 minutes.
- Meanwhile, spread tortilla chips out on a foil-lined baking sheet and sprinkle the cheese over.
- Warm in an oven at 200 degrees C for 5-10 minutes or until the cheese melts over the chips.
- Ladle soup into bowls and put a small mound of cheese-molten chips into the middle of each bowl.
- Sprinkle some of the red chilli on top and serve immediately.
