Corn Chowder With Cheesy Chips by Zarnak Sidhwa

Ingredients:

  • Sweet corn 1 cup
  • Spring onions 2
  • Garlic 1 clove
  • Semolina 2 tbsp
  • Vegetable stock 2 cups
  • Tortilla chips 2 cups
  • Grated cheddar cheese 1 cup
  • Red chillies (deseeded and finely chopped) 2 long

Method:

  1. Drain sweet corn and put into a food processor with spring onions, garlic and semolina.
  2. Pulse till well mixed yet coarse.
  3. Tip this mixture into a large saucepan, add hot vegetable stock and bring to the boil, then turn down the heat and let the chowder simmer, partially covered for 10 minutes.
  4. Meanwhile, spread tortilla chips out on a foil-lined baking sheet and sprinkle the cheese over.
  5. Warm in an oven at 200 degrees C for 5-10 minutes or until the cheese melts over the chips.
  6. Ladle soup into bowls and put a small mound of cheese-molten chips into the middle of each bowl.
  7. Sprinkle some of the red chilli on top and serve immediately.
