Egyptian Rice by Zarnak Sidhwa

Ingredients:
- Rice (boiled) 1/2 kg
- Chicken (de-bone and cut in pieces) 1
- Yogurt 1 cup
- Cream 1/2 cup
- Almonds (halved and roasted) 10-15
- Onion (cut in rings) 1
- Soya sauce 1 tsp
- Corn flour 1/2 tbsp
- Oil 2 tbsp
- Samosa strips (cut in squares and fried golden) 1
- Salt to taste
- Pepper to taste
Method:
- Fry onions till golden and set aside.
- Marinate chicken with salt, pepper, corn flour, soya sauce for 1 hour.
- Heat oil, cook chicken with little water till tender.
- Beat yogurt and cream together.
- Arrange rice on a platter, put the chicken on top.
- Cover with yogurt and cream mixture.
- Put almonds and onion rings on top.
- Arrange the fried samosa strips on top.
- Serve immediately.
