Sabziyon Ka Pulao by Zubaida Tariq

Ingredients:
- Potatoes 4
- Rice 2 cups
- Oil 1 cup
- Peas 1 cup
- Butter 1 tbsp
- Grated carrots 2
- Green chilies 4
- Yogurt 1/2 cup
- Ginger garlic paste 1 tbsp
- All spice some
- Black cumin 1 tsp
- Small cardamom 4
- Salt to taste
- Onion 3
For Stock:
- Water 3 cups
- Coriander seeds 1 tbsp
- White cumin 1 tsp
- Garlic 1
- Onion 1
- Ginger 1 small piece
- Salt to taste
- Big cardamom 2
- Black pepper 4
- Fennel seeds 1 tsp
Method:
- For stock: Put all ingredients in pot, boil it, strain it and keep it aside.
- Then heat oil in big pot, fry onion until golden brown and take out half onion.
- Put yogurt, ginger garlic paste, black cumin, all spice, green chilies and small cardamom in half onion.
- Then roast it lightly, put peas and carrot, roast for 5 minutes and put stock.
- When stock boils, drain water of soaked rice and put rice and salt.
- Water dries, simmer it.
- Then cut potatoes like chips and deep fry it until golden brown.
- Before serving, take out pulao in dish and put potatoes and brown onion.
- Sabziyon ka pulao is ready.
