Rice Croquettes by Zarnak Sidhwa

Ingredients:
For Rice Mixture:
- Boiled rice 1 cup
- Corn 2 tbsp
- Chopped coriander 2 tbsp
- Chopped green chillies 1 tsp
- Chopped onions 1-1/2 tbsp
- Salt to taste
- Roasted cumin powder 1 tsp
- Red chilli powder 1 tsp
- Grated cheese 2 tbsp
- Grated paneer 2 tbsp
- Paneer 2 tbsp
- Breadcrumbs 2 tbsp
For Sauce:
- Chopped tomatoes 1/2 cup
- Chopped onions 2 tbsp
- Chopped coriander 1-1/2 tbsp
- Chopped green chillies 1 tsp
- Chopped garlic 1 tsp
- Orange zest 1 tbsp
- Sugar 1 tbsp
- Black olives 4- 5
- Lemon juice of 1 lemon
- Salt to taste
- Crushed black pepper to taste
For Batter:
- Flour 1/4 cup
- Salt to taste
- Crushed black pepper to taste
- Red chilli powder 1 tsp
- Flour and breadcrumbs to coat
- Oil for frying
For Garnish:
- Lettuce leaves 2-3 leaves
- Black olives a few
Method:
- To prepare rice mixture: In bowl mash the boiled rice.
- Grind corn and add to rice mixture.
- Add chopped coriander, chopped green chillies, chopped onions, salt, roasted cumin powder, red chilli powder, grated cheese, paneer, breadcrumbs and mix well.
- To prepare salsa sauce: In bowl add chopped tomatoes, chopped onions, chopped coriander, chopped green chillies, chopped garlic, orange zest, sugar and mix well.
- Chop black olives and add to the bowl.
- Add lemon juice, salt, crushed black pepper and keep it aside.
- In bowl add flour, salt, crushed black pepper, red chilli powder, water and prepare the batter.
- Make balls out of rice mixture and dust flour on it.
- Put prepared balls in the batter and coat them with breadcrumbs.
- Deep fry the prepared croquettes in hot oil until golden brown and remove them on kitchen paper.
- Serve salsa sauce in a bowl.
- Serve croquettes on a bed of salad leaves.
- Put black olives on skewers and place on the croquettes.
