Achari Sabzi by Chef Gulzar

Ingredients:
- Mix vegetables 1/2 kg
- Potatoes 3-4
- Tomatoes 2
- Onion 1
- Red chili powder 1 tbsp
- Black pepper 1 tsp
- Cumin powder 1 tsp
- Coriander powder 1 tsp
- Ginger garlic paste 2 tbsp
- Turmeric powder 1 tsp
- Fennel seeds 1 tsp
- Onion seeds 1/3 tsp
- Fenugreek seeds 1/3 tsp
- Coriander 1/2 bunch
- Oil 4-5 tbsp
- Salt to taste
Method:
- Heat oil in pan and fry onion.
- Now roast ginger garlic paste.
- Then add tomatoes and roast it.
- Then put mix vegetables and cook it.
- Then add chili powder, black pepper, salt, cumin powder, coriander powder, turmeric, onion seeds, fenugreek seeds and fennel seeds and roast it nicely.
- Then add water as required and cook until water dries and masala leaves oil.
- Then take out in dish, garnish with coriander leaves and serve.
