Aloo Ka Nashta by Chef Gulzar

Ingredients:

  • Potatoes 1/2 kg
  • Garlic paste 1 tbsp
  • Red chili powder 1 tsp
  • Cumin seeds 1/2 tsp
  • Turmeric powder 1/2 tsp
  • Mustard seeds 1/2 tsp
  • Onion seeds 1/2 tsp
  • Pomegranate seeds 2 tbsp
  • Coriander 1 bunch
  • Green chilies 4-5
  • Salt to taste

For Chawal Mong Roti:

  • Rice flour 1 cup
  • Green gram flour 1 cup
  • Garlic paste 1 tsp
  • Cumin powder 1 tsp
  • Red chili powder 1 tsp
  • Olive oil 1-2 tbsp
  • Salt to taste

For Pani Wala Achar:

  • Carrot 2-3
  • Lemon 4-5
  • Onion 1
  • Vinegar 2 cups
  • Red chili powder 2 tbsp
  • Carom seeds 1/2 tsp
  • Onion seeds 1 tbsp
  • Mustard seeds 1 tbsp
  • Whole cumin seeds 1 tbsp
  • Fennel seeds 1 tbsp
  • Fenugreek seeds 1/2 tsp
  • Citric acid 1 tbsp
  • Turmeric powder 2 tbsp
  • Olive oil 1-2 tbsp
  • Salt to taste

Method:

  1. For pani wali aloo ki bhujia: Put water, potatoes, cumin, turmeric, mustard seeds and salt in pan and cook on low flame.
  2. When tender, add onion seeds, mix it and simmer it.
  3. When simmer is completed, add coriander and green chilies, mix it and dish out it.
  4. For chawal & mong ki roti: Put garlic paste, cumin powder, red chili powder and salt in rice flour and green gram flour, mix it, add water as required and make thick batter.
  5. Then put olive oil in pan, spread batter, toast from both sides and remove it.
  6. For pani wala achar:  Cut carrot and onion into Juline.
  7. Now mix turmeric, acid and salt.
  8. Add vinegar and water as required in pan and put vegetables.
  9. Then heat oil in second pan, add red chili powder, carom seeds, onion seeds, mustard seeds, cumin seeds, fennel seeds, fenugreek seeds and salt and crackle it.
  10. Then add vegetables, mix it and put vegetables achar in jar and bottle.
  11. Now serve bhujia with achar and roti.
