Vegetable Biryani by Shireen Anwer

Ingredients:

  • Basmati rice 750 gm
  • Carrot 2
  • Potatoes 2-3
  • French beans 1 cup
  • Capsicum 1
  • Peas 1 cup
  • Onion brown 1 cup
  • Tomatoes 3
  • Small fenugreek leaves 3 bunches
  • Dil 1 bunch
  • Yogurt 1 cup
  • Aloo bukhara 8
  • All spice 1 tsp
  • Salt 1-1/2 tsp
  • Oil 3/4 cup
  • Ginger garlic 1 tbsp
  • Coriander powder 2 tsp
  • Chili powder 3 tsp
  • Turmeric 1/2 tsp
  • Saffron 1/2 tsp
  • Milk 1/2 cup

Method:

  1. Put all spice, coriander powder, chili powder and turmeric in yogurt and mix it.
  2. Now heat oil, put yogurt mixture with brown onion and tomatoes and fry it nicely.
  3. Then add carrot, potatoes, beans, capsicum, peas, fenugreek leaves and dil, cover it and cook for 15 minutes till potatoes tender.
  4. Boil rice until it is ready 3/4.
  5. For assemble: Spread rice with vegetable mixture in pan.
  6. Put saffron and milk mixture in remaining rice and simmer it for 20 minutes.
  7. In end, mix it and serve.
