Gajar Ka Achar by Shireen Anwer

Ingredients:
- Carrot 1 kg
- Oil 1/2 kg
- Garlic cloves 1 cup
- Red pepper 1/2 cup
- Crushed coriander seeds 1/2 cup
- White vinegar 1/2 cup
- Fenugreek seeds 1 tsp
- Onion seeds 1 tbsp
- Turmeric 1 tbsp
- Salt 2 tbsp
- Crushed mustard seeds 4 tbsp
Method:
- Put red pepper, coriander seeds, fenugreek seeds, onion seeds, turmeric, salt and mustard seeds in bowl.
- Now add vinegar and mix it nicely.
- Then put carrot and mix it.
- Then put 1 cup oil in jar and put masala mixed carrot.
- Now put garlic with remaining oil and mix it nicely.
- Use it after 2 days.
