Homemade Vegetable Stock by Zarnak Sidhwa

Ingredients:
- Unsalted butter 1 tbsp
- Chopped onion 1 cup
- Chopped carrot 1 cup
- Chopped white turnip 1 cup
- Chopped celery 2 cups
- Fresh parsley 3 sprigs
- Cloves 2
- Bay leaf 1
- Garlic 1 clove
- Thyme 1 tsp
- Coarse salt 1 tsp
- Ground black pepper 1/4 tsp
- Tomatoes 4
Method:
- Melt butter.
- Add onion.
- Saute onion until golden.
- Add chopped carrots, chopped turnips, chopped celery, fresh parsley, cloves, bay leaf, garlic, thyme, coarse salt, fresh ground black pepper, tomatoes, and water to pan.
- Cover and simmer.
- Strain vegetable stock through muslin lined strainer.
