Ingredients:

  • Wheat flour - 2 cups
  • White flour - 2 cups
  • Instant Yeast - 3 tsp
  • Warm Water - 1 1/2 cup 
  • Brown Sugar - 3 tbsp
  • Salt - 1 tsp
  • Oil - 1/4 cup

Ingredients for filling: 

  • Parmesan Cheese - 1/2 cup
  • Cream Cheese - 4 oz
  • Chopped soya - 2 tbsp
  • Chopped coriander Leaves - 2 tbsp
  • Finely chopped Spring Onions - 1/2 cup
  • Finely Chopped Capsicum - 2 tbsp
  • Finely chopped Olives - 2 tbsp
  • Crushed Garlic - 1 tsp
  • Oil - for brushing 
  • Egg - 1
  • Sesame Seeds - 2 tbsp

Method:

  1. For dough, knead white flour, wheat flour, yeast, warm water, brown sugar, salt and oil together perfectly for 10 minutes in a bowl till the dough turns smooth.
  2. Keep this dough in a greased bowl, cover the lid and keep it in a hot place till it expands in size.
  3. Take another bowl, add Parmesan cheese, cream cheese, chopped soya, chopped coriander leaves, spring onions, chopped capsicum, olives, crushed garlic, egg and mix well.
  4. When the dough gets double, sprinkle flour and roll it on a table.
  5. Roll the dough in a rectangular shape and sprinkle flour again.
  6. Cut the dough into 2 rectangular shapes from the centre and spread the filling vertically on each.
  7. Now with a knife, cut 4-5 strips from both the sides of the filling.
  8. Then fold it from top starting from right then left just like a braid.
  9. Keep this on a greased baking sheet and cover it with a towel.
  10. Leave it for 30 - 40 minutes to raise.
  11. Now brush egg over it and sprinkle sesame seeds.
  12. Bake it in a pre-heated oven for 20 minutes at 180c.

Mediterranean Bread is prepared with Flour and Yeast and filled with Cheese, Dil and Green Vegetables.
