Danda Biryani by Shireen Anwer

Ingredients:
- Mutton bong 1 kg
- Cloves 6
- Green cardamom 8
- Black pepper 8
- Water 4 cups
- Yogurt 1/2 cup
- Salt 2 tsp
- Ginger 2 tbsp
- Garlic 1-1/2 tbsp
For Rice:
- Rice 750 gm
- Ghee 1 cup
- Mint 1 bunch
- Coriander leaves 1/2 bunch
- Green chilies 20
- Yogurt 1-1/2 cup
- Saffron 1 tsp
- Kewra water 1 tsp
- Ginger julienne 1 tbsp
- Yellow color 1/4 tsp
- Mace powder 1/4 tsp
- White cumin 1-1/2 tsp
Method:
- Put all ingredients in pot and cook until meat tender and 1 cup stock remains.
- Now move meat on edges of pot and make space in center.
- Then mix yellow color in yogurt and spread on meat.
- Now add white cumin, mace, green chilies, coriander leaves, mint and ginger.
- Then put boil rice in center of meat.
- Put remaining rice on meat so that it covers.
- Then simmer it for 15 minutes.
- Steams comes, add ghee and water mixture.
- Then mix kewra in saffron and put it.
- Simmer it more for 15 minutes, mix it nicely and serve it.
