Lemonade Cupcake by Shireen Anwer

Ingredients:

  • Butter 3-1/2 oz
  • Caster sugar 1-1/3 cup
  • Flour 2 cups
  • Baking powder 2 tsp
  • Salt 1/4 tsp
  • Lemon zest 1/2 tsp
  • Lemon essence few drops
  • Lemonade powder 1 tbsp
  • Milk 1 cup
  • Eggs 2

For Frosting:

  • Butter 200 gm
  • Milk 1 tbsp
  • Lemonade powder 1 tbsp
  • Lemon essence 2 drops
  • Icing sugar 3/4 cup

Method:

  1. Mix butter with caster sugar, flour, baking powder, salt and lemon zest and beat until crumbly.
  2. Beat eggs, lemon essence and milk for few second in second bowl and fold lemon zest and lemonade powder with spatula.
  3. Now take cake cup lines and bake for 180 degrees C for 15 minutes.
  4. For frosting: Mix all ingredients and beat it.
  5. Now cover cup cake with frosting.
