Cucu Paka by Shireen Anwer

Ingredients:

  • Chicken - 1 kg (12 pieces)
  • Coconut Milk - 1 tin
  • Ginger Garlic - 1 tbsp
  • Green Chilies - 8
  • Coriander Leaves - 1/2 cup
  • Tomatoes - 2
  • Salt - 1 1/2 tsp
  • Turmeric - 1/4 tsp
  • Crushed and roasted Cumin - 1 tsp
  • Lemon Juice - 2 tbsp
  • Flour - 1 tbsp
  • Boiled Eggs( for serving) - 2
  • Grounded Onions - 1
  • Oil - as required

Method: 

  1. Grind green chilies and coriander leaves to make a green paste.
  2. Marinate chicken with ginger garlic paste, salt and the green paste.
  3. In as much oil as you want add grounded onions and fry for 5 minutes.
  4. Now add the marinated chicken and fry well.
  5. Then add turmeric, crushed cumin, tomatoes, cover the lid and cook for 10 minutes.
  6. Add coconut milk and cook till the chicken gets ready.
  7. Add flour paste and move the spoon continuously till the gravy gets thick.
  8. Now add lemon and take it out in a dish.
  9. Serve and garnish with boiled eggs and fresh coriander.

Cucu Paka is a Main Course, prepared with Chicken, Coconut Milk and Vegetables, marinated with Green Vegetables and garnished with Eggs.
