Chicken Tortilla Soup by Zarnak Sidhwa

Ingredients:

  • Boneless chicken breasts 2
  • Olive oil 1/2 tsp
  • Minced garlic 1/2 tsp
  • Ground cumin 1/4 tsp
  • Chicken stock 2 cups
  • Corn 1 cup
  • Chopped onion 1 cup
  • Chilli powder 1/2 tsp
  • Lemon juice 1 tbsp
  • Chunky salsa 1 cup
  • Tortilla chips 8 oz
  • Shredded cheese 1/2 cup
  • Cream 1 tbsp

Method:

  1. Saute chicken in the oil 5 minutes.
  2. Add garlic and cumin and mix well.
  3. Then add stock, corn, onion, chili powder, lemon juice and salsa.
  4. Reduce heat to low and simmer for about 20 to 30 minutes.
  5. Break up some tortilla chips into individual bowls and pour soup over chips.
  6. Top with cheese and a little sour cream.
