Chicken Tortilla Soup by Zarnak Sidhwa

Ingredients:
- Boneless chicken breasts 2
- Olive oil 1/2 tsp
- Minced garlic 1/2 tsp
- Ground cumin 1/4 tsp
- Chicken stock 2 cups
- Corn 1 cup
- Chopped onion 1 cup
- Chilli powder 1/2 tsp
- Lemon juice 1 tbsp
- Chunky salsa 1 cup
- Tortilla chips 8 oz
- Shredded cheese 1/2 cup
- Cream 1 tbsp
Method:
- Saute chicken in the oil 5 minutes.
- Add garlic and cumin and mix well.
- Then add stock, corn, onion, chili powder, lemon juice and salsa.
- Reduce heat to low and simmer for about 20 to 30 minutes.
- Break up some tortilla chips into individual bowls and pour soup over chips.
- Top with cheese and a little sour cream.
