Macaroni Salad, Frozen Chicken Chapli Kabab And Russian Salad by Chef Saadat Siddiqui

Ingredients for frozen chicken Chapli Kabab:

  • Chicken Mince - 1/2 kg
  • Coriander - 2 tbsp
  • Bread - 2 ( soaked in water then take it out)
  • Dry Pomegranate seeds - 1 tbsp
  • Green Onions - 3 to 4 tbsp
  • Fresh Coriander Leaves - 1 to 2 tbsp
  • Crushed green chilies - 2 tbsp
  • Red chili powder - 1/2 tsp
  • Turmeric - 1/4 tsp
  • Salt - 1 tsp

Method:

  1. Grind bread, coriander and dry pomegranate seeds together.
  2. Now add green onions, fresh coriander leaves, crushed green chilies, red chili powder, turmeric, salt and grind them well.
  3. Now add chicken mince and grind it well.
  4. Tap a little water in your palm and make any shape you like from the mince. (i.e. round, oval) and you can freeze it and make sandwiches or eat it as it is.
  5. Heat oil and fry it well.
  6. Serve hot.

Ingredients for Macaroni Salad:

  • Chopped Capsicum - 1 or 2
  • Mayonnaise - 1/2 cup
  • Tomato ketchup - 2 tbsp
  • Hot chili Sauce - to taste
  • Salt - to taste
  • Crushed black pepper - to taste

Method:

  1. Take a bowl and put mayonnaise, ketchup,  chili sauce, salt, crushed black pepper, capsicum and mix well with a spoon.
  2. Add boiled macaroni and mix well.

Ingredients for Russian Salad:

  • Potato (boiled) - 1
  • Carrot - 1
  • Peas(boiled) - 1 cup
  • Mayonnaise -  2 tbsp
  • Cream - 1 tbsp
  • Salt - to taste
  • White pepper - to taste
  • Icing sugar(optional) - to taste

Method:

  1. In a bowl add boiled cubed potatoes, cubed carrot, peas, mayonnaise, cream, salt, white pepper, icing sugar and mix well.
  2. Garnish with parsley.

Macaroni Salad is prepared with Macaroni, Mayonnaise and Cream. Frozen Chicken Chapli Kabab is prepared with Chicken and Bread Slice. Russian Salad is prepared with Vegetables.
