Strawberry Chocolate Mousse Cake by Shireen Anwer

Ingredients for cake: 

  • Eggs - 6
  • Caster Sugar - 6 oz 
  • Flour - 4 oz
  • Cocoa Powder - 2 oz
  • Baking Powder - 1 1/2 tsp
  • Vanilla Essence - 1 tsp
  • Oil - 2 tbsp

Ingredients for Strawberry Mousse:

  • Whipped Cream - 2 cups
  • Strawberry Purée - 1 cup
  • Strawberry Essence - 1/2 tsp
  • Gelatin - 2 tbsp
  • Water ( for dissolving gelatin) - 1/4 cup
  • Icing sugar- 2 oz
  • Chocolate Chips - 1/2 cup

Ingredients for frosting:

  • Whipped Cream - 1 cup
  • Strawberry Essence - 1/2 tsp
  • Strawberry Purée -  4 tbsp
  • Pink colour - 2 drops

Ingredients for glaze:

  • Cream - 1/2 cup
  • Grated Chocolate - 150 gms 
  • Corn syrup - 1 tbsp

Method:

  1. For making sponge, beat eggs with caster sugar till they turn 3 times more.
  2. Now add vanilla essence, oil, flour, cocoa powder, baking powder and fold.
  3. Pour the mixture into 3'8 inch pan and bake for 20 minutes at 180c.
  4. Now take it out and cool it.
  5. For strawberry mousse, whisk cream and add strawberry purée, strawberry essence, gelatin, chocolate chips and fold.
  6. To make glaze, cook cream for a while, then add grated chocolate, corn syrup and keep it a side.
  7. To assemble the cake, add in the mould a layer of sponge, spread mousse and keep it in fridge to settle.
  8. Take it out and repeat the same layer again 2 times.
  9. In the end, pour the glaze and decorate it with frosting.

Strawberry Chocolate Mousse Cake is prepared with Eggs, Flour, Coco Powder, Cream and Strawberry Puree and decorated with Frosting.
