Tamarind Drumsticks With Masala Rice by Shireen Anwer

Ingredients for drumsticks:

  • Chicken Legs - 8 (1/2 kg)
  • Salt - 1tsp
  • Turmeric - 1/2 tsp
  • Water - 1 cup
  • Tamarind Paste - 1/2 cup
  • Chaat Masala - 1 tsp
  • Salt - 1/2 tsp
  • Ginger Garlic Paste - 1 tsp
  • All Spice Powder - 1/2 tsp
  • Crushed Red Pepper- 1 tsp

Ingredients for masala Rice:

  • Boiled Rice - 1/2 kg
  • Oil - 1/4 cup
  • Salt - 1/2 tsp
  • Crushed Red pepper - 1 tsp
  • Turmeric - 1/4 tsp
  • Crushed Coriander - 1tsp
  • Roasted and Crushed Cumin - 1 tsp
  • Ginger Garlic Paste - 1 tsp
  • Chaat Masala - 1 tsp
  • All Spice - 1 tsp
  • Chicken Powder - 1 tbsp
  • Finely Chopped Spring Onions - 1 cup

Method:

  1. Boil chicken legs in water. Add salt and turmeric, boil till the water gets evaporated and the chicken is tender.
  2. In a bowl add tamarind paste, chaat masala, ginger garlic paste and mix well.
  3. Marinate the chicken legs with this mixture.
  4. Heat 1/4 cup oil in a pan and deep fry the chicken legs and keep it a side.
  5. For making rice, heat oil in a pan, add ginger garlic paste, salt, crushed red pepper, turmeric, crushed coriander, roasted and crushed cumin, chaat masala, all spice powder, chicken powder and boil all in 1/2 cup water.
  6. Now add boiled rice in it and mix well.
  7. Cover the lid and put it on dum for 10 minutes.
  8. Take the rice out in a dish, garnish with finely chopped spring onions and serve with drumsticks.

Tamarind Drumsticks With Masala Rice is prepared with Chicken Leg and Rice and garnished with Green Onion.
