Southern Fried Chicken by Shireen Anwar

Ingredients:

  • Chicken-1 kg (8 big pieces)
  • Baking powder- 1/2 tsp
  • Egg-1
  • Butter milk- 1/2 cup 
  • Chili Sauce- 3 tbsp
  • Salt- 1/2 tsp
  • Black pepper- 1/2 tsp
  • Melted butter or Oil- 2 tbsp

For Batter:

  • Crushed cornflakes- 3/4 cup
  • Corn flour- 1/2 cup
  • Flour- 3/4 cup
  • Crushed red chilies- 1 tbsp
  • Paprika powder- 1 tsp
  • Garlic powder- 1 tsp
  • Onion powder- 1 tsp
  • Black pepper- 1/2 tsp

Method:

  1. Marinate chicken with baking powder, egg, chili sauce, salt, black pepper and oil or butter and mix.
  2. To make butter milk mix ½ cup milk and 1 tbsp vinegar in a separate bowl and leave it for 5 minutes.
  3. Add this butter milk to the chicken and mix well. 
  4. Keep the marinated chicken for about 2-3 hours.
  5. Now make the dry batter separately by adding cornflakes, corn flour and flour. Mix well.
  6. Add crushed red chilies, paprika powder, garlic powder, onion powder and black pepper. Mix it well.
  7. Fry oil in a pan.
  8. Roll the marinated chicken in the dry batter; coat it well by pressing the chicken into the batter.
  9. Deep fry for 20 minutes.
  10. Serve with fries and ketchup.

PS: Don’t move spoon before 15 minutes while the chicken is frying as it will remove the coating out.
