Sweet & Sour Brinjal by Shireen Anwer

Ingredients:

  • Brinjals 1/2 kg
  • Oil 1/2 cup
  • Ginger garlic paste 1 tsp
  • Chili powder 2 tsp
  • Turmeric 1/2 tsp
  • Salt 1 tsp
  • Green chilies 8
  • Ginger julienne 3 tbsp
  • Garlic julienne 3 tbsp
  • Tamarind pulp 1/2 cup
  • Brown sugar 2 tbsp
  • Coriander leaves 2 tbsp

For Tarka:

  • Mustard seeds 1/2 tsp
  • Fenugreek 1/2 tsp
  • Cumin seeds 1 tsp
  • Curry leaves 25
  • Onion seeds 1/2 tsp

Method:

  1. Heat oil, put tarka ingredients.
  2. When crackle, put brinjals and cover for 5 minutes.
  3. Now add 1-1/2 tbsp ginger, 1-1/2 tbsp garlic and green chilies and cook for few minutes.
  4. When brinjals are approx ready, add ginger garlic paste, chili powder, turmeric, salt and 1/4 cup water, cover it and cook until it is ready.
  5. Then add tamarind pulp, brown sugar, 1-1/2 tbsp ginger, 1-1/2 tbsp garlic, coriander leaves and onion seeds and serve with baisani parathay.
