Sweet & Sour Brinjal by Shireen Anwer

Ingredients:
- Brinjals 1/2 kg
- Oil 1/2 cup
- Ginger garlic paste 1 tsp
- Chili powder 2 tsp
- Turmeric 1/2 tsp
- Salt 1 tsp
- Green chilies 8
- Ginger julienne 3 tbsp
- Garlic julienne 3 tbsp
- Tamarind pulp 1/2 cup
- Brown sugar 2 tbsp
- Coriander leaves 2 tbsp
For Tarka:
- Mustard seeds 1/2 tsp
- Fenugreek 1/2 tsp
- Cumin seeds 1 tsp
- Curry leaves 25
- Onion seeds 1/2 tsp
Method:
- Heat oil, put tarka ingredients.
- When crackle, put brinjals and cover for 5 minutes.
- Now add 1-1/2 tbsp ginger, 1-1/2 tbsp garlic and green chilies and cook for few minutes.
- When brinjals are approx ready, add ginger garlic paste, chili powder, turmeric, salt and 1/4 cup water, cover it and cook until it is ready.
- Then add tamarind pulp, brown sugar, 1-1/2 tbsp ginger, 1-1/2 tbsp garlic, coriander leaves and onion seeds and serve with baisani parathay.
