Egg Drop Soup by Zarnak Sidhwa

Ingredients:

  • Chicken stock 4 cups
  • Corn flour 1 tbsp
  • Cold water 2 tbsp
  • Green onions (sliced) 2
  • Eggs 2
  • Oil 1 tsp
  • Salt to taste
  • Ground black pepper to taste
  • Soya sauce as required
  • Crisp noodles as required

Method:

  1. Add stock to pan and bring to boil.
  2. In small bowl, combine water and corn flour and let dissolve.
  3. In another bowl, whisk together the eggs and oil.
  4. When chicken stock is boiling, pour in corn flour mixture and stir well.
  5. Add green onions and salt and pepper to taste.
  6. Turn heat off and pour in egg, stirring constantly, until egg is cooked and shredded.
  7. Serve garnished with soya sauce and crisp noodles.
