Cream Of Mushroom Soup by Zarnak Sidhwa

Ingredients:
- Fresh mushrooms 1 lb
- Onion (chopped) 1 (small)
- Butter 4 tbsp
- Chicken stock 1 cup
- Butter 4 tbsp
- Flour 3 tbsp
- Milk or cream 2 cups
- Salt 1/2 tsp
- Pepper 1/4 tsp
- Cream 1-1/2 cups
- Fresh parsley (to garnish) 1 tbsp
Method:
- Saute mushrooms and chopped onion in 4 tbsp butter.
- Cook slowly for 20 minutes, stirring regularly.
- Add chicken stock.
- Melt over low heat other 4 tbsp butter.
- Add flour and cook for 5 minutes, stirring.
- Add milk or cream slowly and stir until thickened and smooth.
- Add salt and pepper. Stir in mushrooms, onion and chicken stock.
- Slowly add cream.
- Serve garnished with fresh, chopped parsley.
