Chinese Chicken Soup by Zarnak Sidhwa

Ingredients:
- Green onions 5-6
- Small shiitake mushrooms (re-hydrated, finely sliced) 6
- Chicken stock 5 cups
- Shredded boiled chicken breast 2 cups
- Eggs (beaten) 2
- Salt to taste
- Ground black pepper to taste
- Soya sauce 2 tsp
Method:
- Slice onions finely, reserving green part for garnish later.
- Add chicken stock to pot and bring to boil.
- Add onions and mushrooms and saute for 3 minutes.
- Add shredded chicken and stir well.
- Whisk together the eggs, salt and pepper until frothy and thick.
- Steadily pour mixture into pot, constantly stirring to form shreds.
- Cook, stirring constantly for 2 minutes.
- Add soya sauce and mix well.
- Serve in soup bowls with reserved green onions.
