Ingredients:
- Pearl Barley 1/3 cup
- Grated Rind and Juice 2 lemons
- Caster Sugar 1/2 cup
Method
- Place barley in a sleve. Rinse under running water until water runs clear then place in a saucepan with lemon rind and 6 cups of water.
- Bring to the boil over medium heat. Simmer for 10 mins then strain mixuter into heatproof bowl, discarding barley. Add sugar to bowl.
- Stir to dissolve then stir in lemon juice. Pour into bottles and regrigerate until chilled.
