Nauratan Chutney by Shireen Anwer

Ingredients:

  • Raw mangoes (grated) 1 kg
  • Sugar 2 kg
  • Melon seeds 50 gm
  • Almonds 30 gm
  • Pistachio 30 gm
  • Raisins 30 gm
  • Oil as required
  • Onion seeds 1/2 tsp
  • Red chili (crushed) 1/2 tsp
  • Saffron color 1 pinch
  • Salt to taste
  • White vinegar as required

Method:

  1. Boil raw mangoes with salt.
  2. Now strain it and put in sauce pan.
  3. Then add sugar and cook it.
  4. When fragrance comes, close stove.
  5. Now heat oil in frying pan, fry almond, pistachio, raisins, onion seeds and melon seeds, give bhagar to chutney and when cool, put vinegar.
  6. Nauratan is chutney is ready.
