Stick Date Cake by Zarnak Sidhwa

Ingredients:

  • Chopped pitted dates 250 gm
  • Soda bicarbonate 1 tsp
  • Boiling water 1-1/2 cups
  • Butter 125 gm
  • Brown sugar 3/4 cup 
  • Vanilla essence 1 tsp
  • Eggs 2
  • Sifted flour 2 cup
  • Baking powder 1 tsp

Method:

  1. Place dates and soda bicarbonate in bowl.
  2. Pour over boiling water.
  3. Allow to stand, uncovered for 20 minutes or until dates are tender.
  4. Beat butter, add sugar and vanilla essence until pale and creamy.
  5. Add eggs, 1 at a time, beating well after each addition.
  6. Stir in date mixture and flour.
  7. Mix until well combined.
  8. Spoon mixture into greased and lined 7 inches pan cake.
  9. Bake for 40-45 minutes or until a skewer inserted into center comes out clean.
  10. Stand for 10 minute before turning onto wire rack.
