Chicken Rollers by Chef Gulzar

Ingredients:

  • Chicken breast 1
  • Garlic paste 1 tbsp
  • Worcestershire sauce 2 tbsp
  • Lemon juice 1 tbsp
  • Mustard paste 1 tbsp
  • Oil for fry
  • Salt to taste

For Filling:

  • Boiled spinach chopped 1/2 kg
  • Mozzarella cheese or Cheddar cheese 200 gm

For Coating:

  • Eggs 1-2
  • Maida 2-3 tbsp
  • Corn flour 1-2 tbsp
  • Desiccated coconut 1/2 cup

For Sauce:

  • Garlic cloves 3-4
  • Crushed red chilies 1/2 tsp
  • Cream 1 cup
  • Chicken stock 1/2 cup
  • Tomato ketchup 1/2 cup
  • Lemon juice 1 tbsp
  • Corn flour 1 tbsp
  • Mustard seeds 1/3 tsp
  • Oregano 1/3 tsp
  • Oil 2 tbsp
  • Salt to taste

Method:

  1. For sauce: Heat oil in pan and fry garlic cloves.
  2. Then add red chilies and mustard seeds and mix it.
  3. Now add cream, stock, ketchup, lemon juice, corn flour, oregano and salt, mix it and cook it.
  4. When it boils, add corn flour and make thick.
  5. For filling: Mix spinach and cheese.
  6. Now beat eggs, add maida and corn flour and make thick batter.
  7. Now cut chicken into thin thin fillet.
  8. Now marinate it with lemon juice, sauce, mustard paste, salt and garlic paste and leave it for a while.
  9. Then fill spinach mixture in center of chicken fillet and roll it.
  10. Dip in egg batter and coat with coconut.
  11. Then heat oil in pan, fry roll one by one, take it put and put on tissue paper so that oil absorbs.
  12. Cut into pieces if required and serve with sauce.
