Date Nut Muesli Slice by Zarnak Sidhwa

Ingredients:

  • Toasted Muesli 1 1/2 cups
  • Flour 1 cup
  • Caster Sugar 1 cup
  • Desiccated Coconut 1/2 cup
  • Walnuts( coarsely chopped) 1 cup
  • Pitted Dates 1 cup
  • Butter 100grams
  • Golden Syrup 2 tbsp
  • Hot Water 1 tbsp
  • Bicarbonate of Soda 1/2 tsp
  • Egg 1

Method:

  1. Grease and line base and sides of 19 x 29cm slices pan with baking paper, allowing sides to overhang.
  2. Combine oats, flour, sugar, coconut, walnuts and dates in large bowl.
  3. Combine butter, golden syrup and water in saucepan over low heat.
  4. Cook, stirring occasionally, for 2-3 minutes or until butter melts and mixture is smooth.
  5. Remove from heat.
  6. Add bicarbonate of soda and stir to combine.
  7. Add to oat mixture with egg and stir until well combined.
  8. Spoon into prepared pan and smooth surface with back of spoon.
  9. Bake at 180 degrees C in a preheated oven for 30 minutes or until golden brown and firm to touch.
  10. Remove from oven.
  11. Set aside for 15 minutes to cool slightly before turning onto wire rack to cool completely.
  12. Cut into squares to serve.
