Date Nut Muesli Slice by Zarnak Sidhwa

Ingredients:
- Toasted Muesli 1 1/2 cups
- Flour 1 cup
- Caster Sugar 1 cup
- Desiccated Coconut 1/2 cup
- Walnuts( coarsely chopped) 1 cup
- Pitted Dates 1 cup
- Butter 100grams
- Golden Syrup 2 tbsp
- Hot Water 1 tbsp
- Bicarbonate of Soda 1/2 tsp
- Egg 1
Method:
- Grease and line base and sides of 19 x 29cm slices pan with baking paper, allowing sides to overhang.
- Combine oats, flour, sugar, coconut, walnuts and dates in large bowl.
- Combine butter, golden syrup and water in saucepan over low heat.
- Cook, stirring occasionally, for 2-3 minutes or until butter melts and mixture is smooth.
- Remove from heat.
- Add bicarbonate of soda and stir to combine.
- Add to oat mixture with egg and stir until well combined.
- Spoon into prepared pan and smooth surface with back of spoon.
- Bake at 180 degrees C in a preheated oven for 30 minutes or until golden brown and firm to touch.
- Remove from oven.
- Set aside for 15 minutes to cool slightly before turning onto wire rack to cool completely.
- Cut into squares to serve.
