Cherry Upside Down Cake by Shireen Anwer

Ingredients:
- Butter 2 oz
- Brown sugar 1/2 cup
- Pitted cherries 1/2 kg
For Cake:
- Butter 8 oz
- Caster sugar 8 oz
- Baking powder 2 tsp
- Salt 1 pinch
- Eggs 4
- Vanilla essence 1-1/2 tsp
- Cinnamon 1/2 tsp
- Milk 1/2 cup
- Soft drink 1/2 cup
Method:
- Put butter in 9 inch pan cake, spread it nicely, sprinkle brown sugar, keep cherries and keep tin aside.
- For cake mixture: Beat butter and sugar and add eggs.
- Then beat essence and cinnamon and fold in baking powder, salt, milk and soft drink.
- Now put this mixture in baking pan, bake on 180 degrees C for 45 minutes and serve it.
