Ingredients:
- Butter 125 gm
- Sugar 250 gm
- Eggs 2
- Flour 500 gm
- Salt 1 pinch
- Baking powder 1 tsp
- Soda bi carbonate 1 tsp
- Red glace cherries 100 gm
- Pitted dates 125 gm
- Yogurt 200 mg
For Syrup:
- Orange juice 200 ml
- Grated orange rind 1 tsp
- Sugar 200 gm
Method:
- Beat butter and sugar together.
- Beat eggs into mixture one at a time until light and creamy.
- Sift flour, salt, baking powder and soda and add to egg mixture. Add fruit.
- Add yogurt, mix and place in greased loaf or ring cake tin.
- Bake in a preheated oven at 180°C for about 35-45 minutes.
- For syrup: Place all ingredients in small saucepan, simmer for 5 minutes, pour over cake while still hot.
