Date & Cherry Loaf by Zarnak Sidhwa

Ingredients:

  • Butter 125 gm
  • Sugar 250 gm
  • Eggs 2
  • Flour 500 gm
  • Salt 1 pinch
  • Baking powder 1 tsp
  • Soda bi carbonate 1 tsp
  • Red glace cherries 100 gm
  • Pitted dates 125 gm
  • Yogurt 200 mg

For Syrup:

  • Orange juice 200 ml
  • Grated orange rind 1 tsp
  • Sugar 200 gm

Method:

  1. Beat butter and sugar together.
  2. Beat eggs into mixture one at a time until light and creamy.
  3. Sift flour, salt, baking powder and soda and add to egg mixture. Add fruit.
  4. Add yogurt, mix and place in greased loaf or ring cake tin.
  5. Bake in a preheated oven at 180°C for about 35-45 minutes.
  6. For syrup: Place all ingredients in small saucepan, simmer for 5 minutes, pour over cake while still hot.
