Vegetable Malai Kofta by Zubaida Tariq

Ingredients:
- Boiled potatoes 4
- Peas 1/2 cup
- Carrot 1
- Mint leaves 1 bunch
- Coriander leaves chopped 1 bunch
- Green chilies chopped 4
- Long green chilies chopped 3
- Bread slices 2
- Salt to taste
- Egg whites 2
- Rice flour 2 tsp
- Black pepper crushed 1 tsp
- Seekh kabab masala 2 tbsp
For Gravy:
- Onion 3
- Yogurt 1/2 cup
- Ginger garlic paste 1 tbsp
- Red chili powder 1 tbsp
- Turmeric 1 tsp
- Coriander powder 2 tbsp
- All spice powder 1 tsp
- Chicken cube 1
- Oil 1 cup
- Salt to taste
- Fresh cream 1/2 cup
Method:
- Peel boiled potatoes and make bharta with fork.
- Put carrot and peas in chopper and grind finely.
- Now put potatoes bharta, peas, carrot, 1/2 bunch coriander leaves, 1/2 bunch mint leaves, 4 green chilies, salt, seekh kabab masala, rice flour and bread slices in bowl and mix it nicely.
- Then mix black pepper and salt, grease hands, make small small koftay, dip in egg whites and shallow fry in oil.
- Now heat oil in big pot, fry onion until golden brown, take it out, spread on tissue, make crisp, crush it and mix in yogurt.
- Then put ginger garlic paste, turmeric, chicken cube and red chili powder in yogurt, put again in pot, roast it lightly and spread on fried koftay.
- Then put 1 cup hot water and salt and cook it.
- When salan is cooked nicely, put cream and 3 long green chilies.
- Then add all spice powder and simmer it for 5 minutes.
- Then put 1/2 bunch coriander leaves and 1/2 bunch mint leaves and serve hot.
